Ingredients
  

  • 2 cups (500g) plain Greek yogurt (strained)
  • 2 medium cucumbers
  • 2 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp white vinegar
  • A pinch of salt
  • A dash of white pepper (optional)

Method
 

  1. Wash the cucumbers thoroughly. Grate them with their skin on (optional) using a coarse grater. Sprinkle a pinch of salt over the grated cucumber and let it sit in a colander for 10-15 minutes to draw out excess water.
  2. Use your hands or a clean kitchen towel to squeeze the cucumber, removing as much moisture as possible. Transfer it to a mixing bowl.
  3. Add the Greek yogurt to the bowl along with the minced garlic, olive oil, vinegar, salt, and white pepper if desired. Mix everything well until it’s smooth and creamy.
  4. Taste the tzatziki and adjust the seasoning if needed. For best results, refrigerate it for at least an hour to allow the flavors to meld.
  5. Serve chilled with your favorite dishes or as a dip with fresh veggies, bread, or chips.
